Winery History
The history of the creation of Kaheli's winery has a long story and does not begin in Georgia. More than 10 years ago, the largest hotel chain in Ukraine opened Georgian restaurants at its hotels. Since the Georgian wines presented on the Ukrainian market did not meet the pricequality parameters for its restaurants, the hotel-chain managers went and selected wines from several wineries in Georgia, which they began to import to Ukraine. At the same time, within the holding, a winery was created in Ukraine, which later separated and became independent.
To work at this winery, the Bulgarian winemaker Anton Yordanov was invited, who worked> at the Bulgarian winery "Seven Generations," a Master of Oenology in the field of wine technology, with 10 years of experience, as well as 5 years of specialization in Central and Northern California under the guidance of Prof. Dr. Keith Patterson - Head of the Department of Viticulture and Enology at Cal Poly University, USA. Today it is one of the leading wineries in Ukraine, which constantly receives gold medals for its wines and participates in international exhibitions.
At a certain point, the hotel-chain managers and winemaker decided that the accumulated experience in winemaking in Ukraine could be tried in Georgia, combining it with traditional Georgian winemaking. The presence of a large number of autochthonous varieties in Georgia provides a truly enormous potential for working with both autochthonous and international grape varieties and blends with them.
Telavi
After searching for a place for a winery for a year, a building was found in Telavi, the administrative center of Kakheti, where there had also previously been a winery. The winery received the name - "Kakheli's" - which translated from Georgian means Kakhetian or Kakhetian's Winery. Since we are located in the center of Kakheti region, this name seemed logical to us. The winery's logo depicts Pegasus, the coat of arms of the city of Telavi, where the winery is located.
Since Kakheti, the region where Telavi is located, is known for its rich cultural heritage, including literature, music, wine, and art, and the Pegasus symbolizes the region's contribution to Georgian culture and its desire for growth and development, therefore, the Pegasus in the winery logo symbolizes the winery's contribution to the regional wine culture and inspires our team for development and progress.
Wine
When releasing the first wines in 2023, we used already existing wine material, which was selected and processed by our Winemaker Anton Yordanov and his assistant winemakers Levan Garibashvili and George Bakhsoliani. Also in 2023, we independently collected and processed our first grape harvest with the varieties Kisi, Khikhvi, Saperavi, and Shavkapito.
In the same year, the first 20 barrels for aging wine were purchased and the first 8 Qvevri were ordered, which are planned to be buried this spring in order to process part of the 2024 grape harvest using classical Georgian technology.
Our credo is to produce high-quality wine in small quantities so as not to lose the unique qualities of the grapes. We will use both Georgian traditional technology and European wine production technology, creating wines at the intersection of this knowledge that will take their rightful place in the wine collection of the best wines of Georgia.
